Ingredients: Potatoes, cornstarch, onion powder, powdered sugar, salt, white vinegar, cooking oil, melted animal fat.

Disclaimer: This recipe does not claim to be the secret recipe of any fast food or restaurant.

Method - An illustrative video is attached at the bottom of this blog post but it is necessary to read through first.

Tip: This recipe requires prompt actions, preventing the cut chips from resting in water for too long.

Follow these steps as outlined for best results. Might not make sense in the beginning, but just adhere to the guidelines in the listed order.

● Be careful with seasoning as potatoes easily absorb them, so as to avoid an obvious sugary or salty taste.

■■ In a bowl, add cornstarch; some onion powder, some powdered sugar, salt.

● In a well sized pot, add water and put on a stove. You will light up the stove later. Just get it ready.

● Thoroughly wash your unpeeled potatoes - peel - slice thinly in strips; fries style - put in an empty bowl or colander - do not soak potatoes in water.

● When you are almost done peeling the quantity you have, light up the stove for the pot of water to boil.

■■■ Try making proper time calculations here.

● After peeling and slicing potatoes transfer in bits to a colander and rinse the potatoes under a running tap while the water drains through the holes of the seive.

● Transfer rinsed portions to a clean bowl.

● After completely rinsing all, set aside for a moment.

● To the boiling water, add some vinegar and salt.

● Transfer the sliced & rinsed potatoes to this boiling mixture. Let it blanch for 2 - 5 mins; depending on how thin the potato strips are.

● Remove and strain well; transfer to a tray. Pat dry with a kitchen paper towel.

● Tranfer these strained, dried, blanched potato strips to the bowl with cornflour and seasoning. Ensure they are coated in a powdered form NOT in form of batter.

● Heat up oil. Add animal fat for flavor.

● Dust excess flour from strips before dropping in oil to fry.

● Once done, scoop out of oil into a strainer to remove excess oil.

● Serve as desired. Here's a crispy turkey recipe to enjoy your fries with (here) and a delicious drink recipe to enjoy with (here & here)
