Recipe: Crispy turkey wings

Turkey is a popular protein choice for Christmas. My personal favorite; duck too!

Golden, crunchy skin and tender turkey meat is a delicious centerpiece for the festive table; a tasty crowd-pleaser.

A recommended idea is trying this crispy turkey recipe; same recipe will work for any choice of bird you prefer for celebrating the season: chicken, duck, guinea fowl, wings, even goose.

This recipe is ideal for one kilogram of turkey pieces. Adjust seasoning according to the quantity you are making.


Ingredients to prepare one kilogram of turkey pieces; I will be using turkey wings

First section 

1 teaspoon salt

1 teaspoon seasoning powder (adjust to taste buds)

2 teaspoons of soy sauce

2 tablespoons sweet paprika

2 tablespoons hot pepper powder (optional/adjust to spice preference)

1 teaspoon black pepper

1 teaspoon white pepper

1 teaspoon garlic powder

1 teaspoon ginger powder

1 teaspoon chopped garlic

1 teaspoon chopped ginger

Second section 

350 ml Milk

2 tablespoons white vinegar

Third section 

2 eggs 

Fourth section: Dry coating 

2 cups of wheat flour

1 cup of corn starch

1 teaspoon salt (adjust to taste)

1 tablespoon chilli powder (adjust to taste)

Method

1) In a proper size bowl, add the turkey pieces and ingredients in section one. Rub in well.

2) In a 500 ml container, add items in section two. Mix together. Pour mixture in the bowl with turkey in point 1. Mix contents together.

3) Keep aside in a cool place or in the fridge to rest for one hour.

4) After an hour, add the two eggs in section three into mixture. Mix in. Keep aside on a table top.

Tip: break eggs; one at a time into a dish, adding each one individually into the mixture. This ensures the eggs are fresh, to avoid adding rotten eggs to the mixture. It is cheaper, and lesser stress to throw out one rotten egg than throwing away the whole batch.

5) Make dry coating with ingredients in fourth section. Mix well.

6) Take turkey from marinade, one at a time. Coat in dry coating. Place coated pieces on a tray.

7) In a frying pan, add enough oil for deep frying. Season oil with onion slices, fresh thyme, fresh basil, bay leaves, cardamom, fresh cilantro leaves, cilantro seeds, cloves, fresh garlic. Allow these spices to fry, brown in oil, and discard.

8) Fry turkey (from point 6) in seasoned oil (point 7).
